So, it’s no secret that I’ve never jumped on the pancake train.  Don’t get me wrong – I do enjoy pancakes, but something about them is a little plain and boring. Yes, I know there are a million ways to make pancakes fun (see ALL of Heather’s pancake recipes), but that still doesn’t do it for me.

A little while ago, I figured out why – I there is not enough variety in the texture, and I eat them way too fast.  Call me weird.

Enter: waffles.  Essentially the same ingredients as a pancake, but somehow a million times more fun and exciting.

The little squares make for perfectly distributed toppings that don’t fall off – with all the fluffiness and flavor of a pancakes!  Plus, they’re already perfectly sectioned in bite-size squares to keep me from taking monster bites and eating too fast.

Yes, I finally took the plunge and got myself a cheap-o waffle maker.  But it works like a charm.  Fluffy, healthy, Belgian waffles in less than 10 minutes, yes please!

My favorite recipe so far is a slightly modified version of the PurelyTwins’ recipe for a grain-free coconut flour waffle.  Except I usually use 1 egg and 1/4 cup egg whites instead of 2 whole eggs.

Enjoyed with a side of coffee.

I had that waffle for breakfast three days in a row, and it was glorious.  It even kept me full for hours! So I can officially say I’m hooked.  Bring on the waffle recipes!!

    I like waffles because I can do everything else and don’t have to worry about flipping/cooking them. I get to just leave them there and wait till they are done cooking LOL.

  3. Aaaah, waffles for breakfast sound pretty awesome. I can’t even remember the last time I had a waffle. Which are your favourite toppings? Is that chocolate syrup in the picture? Mmmh!

      I love topping my waffles with some chopped fruit and maybe some nut butter or maple syrup – but that’s actually blackstrap molasses in the picture! It’s slightly more bitter than maple, but I like the tangy flavor.

    Seriously though, I think I’m exempt from this question….although I have had some fun with my waffle maker…key word SOME…right after my last waffle recipe it started rebelling on me again! I swear I’mma throw it out the kitchen window one day! Hmm, but not before I try the twins’s recipe! I was wondering if that was any good!

    Oh but dude! If you need texture/variety in your pancakes, the pear or apple ones I made a couple months ago would totally knock your socks off! Contrasting texture mecca I tell you!! Fo shizzle! <- why did I just say that??
