Yesterday I went to class wearing boots and jeans. Today I’m wearing a sweater and sneakers. Isn’t summer supposed to stay until at least September 21st? Unlike many (well, most) bloggers, I don’t think I’m quite ready for fall yet. I still need a week or so of iced coffee and sundresses.
Well, I guess I’ll just have to make it pumpkin iced coffee (terrible, I know). Anyway, I think it’s safe to say I’m pack in the groove of school, homework, routine, healthy foods, etc.
figs and coffee! Lately I like to start my mornings with fruit and coffee, then a little while later have a more substantial breakfast with some protein and fat.
figs were rather small, so I reached for an amazingly sweet and juicy local organic peach. I love fruit.
microwave almond flour protein muffin. I’ll post a recipe once I fine tune it a bit, but it was delicious! drizzled with a touch of coconut oil chocolate sauce and a spoonful of creamy almond butter.
giant salad of arugula, tomatoes, peppers, cucumber, sardine salad (with tahini and mustard), and balsamic vinegar. Eaten on campus.
The chill made me crave hot tea. Red tea with almond milk from Argo on campus!
post-class snack – 2 hard-boiled eggs with lemon pepper.
I was super hungry when I got home from class, so I had a sliced banana with almond butter to give me some energy for my Best Body Bootcamp workout. I almost didn’t do the workout, but once I got into it, I was so glad I did! Never regret a good sweat session.

can you tell I was feeling rather inspired? steamed kale and pea shoots, baked delicata squash “fries”, and pre-made grilled tofu. With mustard for dipping (don’t ask why, it just tasted good!). This dinner came together super quickly. I put the squash in the oven, took a shower while it cooked, then when I was done and dressed I steamed the greens and warmed the tofu. Easier than pie!
(One thing I’m always ready for when it comes to fall? Squash.)
a little indulgent study snack – peanut butter chocolate chunk bar (wasn’t as good as I was hoping, but I still savored and enjoyed every bite!), and decaf spice tea. Fuel for coffee shop study sessions.
