I’m back in my element – well, aside from the whole “doing school work” thing, that is.  That is proving a little more difficult to get back into.

Eating big bowls of super foods – greens, sweet potato, pepper, cucumber, red okra, tahini salmon salad.

Since last week was so crazy with other life and school things, I didn’t have a ton of time to spend on healthy meals.  And as a result I was low energy, and had little motivation to do anything about it.  I’ve never been one to do a ton of food preparation, as I usually am pretty good at throwing something together really quickly.  But even that “really quickly” time adds up! 10 minutes here, 15 there, etc. – Which could give me an extra hour or so to work during the week.

So I’m trying my hand at food prep, so I have no excuses not to stay on track this week.  Here’s what I did:

Cut veggies for easy salads and snacking.

Grilled marinated tofu for lunch and dinner protein.

Two breakfast burritos (egg, black beans, salsa, brown rice tortilla) – the “insides” picture didn’t come out.

hard boiled eggs…

…and iced coffee in the fridge.  I also have tons of greens, fruit, and other meal bits on hand, but I’m hoping that this will take some of the guesswork out of my on-the-go meals.

I’m new to this, so I’m still figuring out what works for me when it comes to grocery shopping and food prep.  I’m constantly learning, and trying to find a good system that minimizes my stress, doesn’t take too much time, and is budget-friendly.

    I’ve been working on food prep for my weeks, too! I find I’m much more likely to grab veggies if I can just grab them and start snacking. I’ve been trying to pack my lunch the night before, too. It always makes me feel like I have a great start to the day ahead, as nerdy as it may sound 😉

    I love food prep! It saves SO much time, hassle, and I’m pretty sure money. I prep my lunches for the week on the weekends, eat oatmeal/smoothies for my breakfasts, and then leave dinners a little more free, since I usually have some free time in the evening and DO love cooking, when I can! And I reaaaally want that tofu…

      It definitely saves money as well, Allie! And I’m very much the same way, I like cooking in the evening when I can. PS – I’m working on a recipe for the tofu, hopefully I’ll post it when I get it all right!
