work snackage – I made Gina’s recipe into muffins.
homemade veggie quinoa sushi
lunch in the park – spinach, peppers, carrots, smoked sardine salad, hot peppers (tasted just like the insides of a potbelly tuna sandwich!)
frittata for dinner – kale, eggs, egg whites, daiya (super melty, dairy free!) cheeze, salsa
salad bowl of yum – steamed kale, raw red okra, purple bell pepper, lentils, figs, balsamic-tahini dressing.
Sorry Jenn, I promise I’ll talk about staples again next week.
