Wow – so it seems that everyone loves some ugly food! Glad I’m not alone there 😛
I think it’s now safe to say I’m back on the budget & healthy living train! I’ve pushed myself (beat the motivation slump!) to get good workouts in for a few days in a row, and after a days of restaurant meals and store-bought snacks, I couldn’t be happier. My little kitchen creations have been quite good as well – take this amazing breakfast for example:
two lightly fried eggs, mashed avocado with sea salt on Ezekiel toast, juicy nectarine, and homemade cold-pressed coffee.
Devoured. The runny yolks were perfect.
I couldn’t get enough of the avocado on toast – I had to have it for lunch too! I love my snack plate lunches.
Food coop produce haul! All organic, mostly local, and cheaper than the grocery store. It’s worth the 20 minute walk.
More mixing bowl salads. Mmm.
Ice cream for breakfast? Don’t mind if I do! My magic bullet needs a new gasket, so at the moment I only have my mini-prep. So I made protein strawberry banana soft serve. Again, it didn’t turn out pretty, but it sure was tasty.
Savory sweet potato – kale ‘n eggs, pepper, salsa. Simple, tasty, filling, nutritious.
