I know, I completely glossed over posting on valentines day.  No, I’m not a v-day hater, and I certainly had a bit *more* than my fair share of sugary treats, but I don’t feel the need to make a big deal about it.  I find that when I do, I just set myself up for disappointment, which I don’t need.

So I had a good v-day in my own way – even wore my heart earrings, ate some chocolate, said happy valentines day to a few friends, and smiled at strangers.

Onto more important things – like What I Ate Wednesday! This is not a comprehensive day of eats, as my class schedule is far from consistent, and I can’t manage a full day.  But of course, I’m still taking on Love Your Veggies Month.  I love this – it’s such a great way to remember to eat more veg.  Plus, meals always look better when they’re more colorful.

Yogurt bowl for breakfast!  Plain filmjölk (they love their cultured dairy here!) with bananas, chia, crunchy oat cereal (don’t know what it translates to), sunflower seeds, cinnamon, and warm blackberries.

Most random lunch ever.  Omelette/pancake thing with peas in tomato sauce and a side of crunchy romaine.  What can I say – I was hungry and wanted food now.

Best lunch in a while – spinach salad with avocado lime dressing, and a side of vegan refried beans and cilantro-lime rice.

Friends’ dinner!  For valentines day, a few friends and I decided to go the cheap route and cook ourselves a nice sit-down dinner.  We went to my place and made some whole wheat spaghetti with a mushroom, and garlic shrimp sauce.  Loved by all!

My sugar craving went into overdrive last night, and I was really close to giving in and buying something like a giant cinnamon roll – but I pushed through and went the cheap, healthier option.  Juicy green grapes.

Also, I’ve been on the lookout for fresh dates ever since Nada brought it to my attention that these were far better than their dried counterparts.  And they so are! Of all the things I can’t find in Sweden, these I can.  Odd. Random.  I had a couple with a little smear of tahini.  Favorite healthy dessert :-)

    yum! I love seeing what you’re getting to eat in Sweden! like those great looking o cereals. Are they whole wheat? can’t even find whole wheat os here… :(

    omelette pancakes? sounds good. I love how you topped it as well. I love peas and tomato sauce together, for some reason.
    I’ve also been wanting to try carrot juice. I love carrots, so would love the juice? Next on my list, I suppose.
    fresh dates. I don’t like fresh figs, but are fresh dates delish? I love tahini and dried figs/dates, so perhaps I shall give a look for these.
    vegified meal was frorm whole foods because I made myself a valentine’s date single style! mmmm

      yes, Hannah! They’re actually oat and whole wheat. If there’s one thing there is no shortage of here, it’s high fiber whole grain products. Fresh dates are *very* similar to dried dates, they’re just softer and have more flavor – not like fresh figs at all. Mmm I miss whole foods.

    Your food always looks so delicious! and that yogurt bowl looks amazing. Best vegefied meal I ate today was my lunch! Lettuce, sautéed spinach, red onion, peppers, and tomatoes with tuna and egg for some protein :)

    The best Valentine’s Day I’ve had was when a group of us, all single, went out for a random Monday on the town – and that’s including five years while I was with my ex-boyfriend :-)
    I actually really like the look of that pancake thing – love a bit of ketchup on my vegetables – and I didn’t know you could get fresh dates, might have to try!
