Thanks so much for all the support on my (rather long-winded) announcement. I’m trying to respond to comments more, as I know I love it when I get responses on comments I leave on other blogs. I just hope the comment-reply emails are working!
There are some days when I never want to take pictures of anything. No matter how pretty or delicious-looking my food is, there are times when I am just not in the mood to capture it – then I regret it later when I can’t think of anything to blog about.
Then, there are other times when I just want to photograph everything! So I take advantage of those days to do a photo-dump post. Another weekend in pictures! (there’s a recipe in there too :-P)
Friday’s post 5 mile run breakfast: egg-rito on a light tortilla, sprouted grain toast with Vermont PB Mad River Mojo <– love this stuff!
There were many snack-y moments. Which called for air popped corn with nooch!
I took this baby to the graveyard, a.k.a. Staples. He lost all energy and pooped out on me after only 2.5 years!
Now I’m printer/scanner/copier-less and not too happy about it. But a two months before moving out is not a good time to buy new appliances. I’ll suffer through print labs and horribly dysfunctional copiers.
My suite-mate and I had a lazy sushi night and watched Bones. Love that show!
One of my better oatmeal combos: 1/4 c oat groats (denser than rolled), 1 T chia seeds, a few drops coconut extract cooked in 1 c water. Topped with banana slices, more shredded coconut, cashini butter and a splash of almond milk (added later). I was full for hours!
I spent a good deal of time yesterday in search of delicata squash. No idea why, but I really wanted one! I tried the farmer’s market and Whole Foods with no such luck. I finally found a few at a local organic market – and I bought four (they’re small!). And a kabocha.
I decided it was time to create a new, easy, savory recipe with my delicata.

And of course, I chose the homework snack option. It even gets the quantum book photo-op!
I also made some fluffy coconut millet for the week. Let’s hope it lasts that long!
And baked some scones. I used this recipe, with a few minor adjustments (different PB, less sugar, all whole wheat pastry flour). Perfection.
I even had one on top of my pumpkin & oat bowl this morning.
Phew. Glad I got that all out there. Now I’m probably going back to not taking pictures and not blogging for a day or two as I approach the jam-packed days of my week.
