WIAW, Finally!
First of all, thank you for the lovely comments on my last post! But now, I’ve finally decided to join the What I Ate Wednesday, hosted by the wonderful Jenn at Peas and Crayons!
It’s difficult to track a full day of eats, with work and running around, so here is a combination of things from the last couple days.
Breakfast
Breakfast on-the-go, at work! TJ’s blueberry muesli (it’s so good!) with chia seeds, fresh blueberries from the store, and soymilk poured in about 5 minutes before eating. In a glass ball jar, eaten with my bamboo To-Go Ware spoon!
Lunch (yesterday)
Roasted yellow squash (from Door-to-Door Organics package!) over a bed of baby romaine, and bean salad.
Dinner (yesterday)
A lovely meal out with the family at Park Grill in Millennium park. Chilled green tomato gazpacho, followed by Sardinian couscous with grilled veggies: acorn squash, portobello, and asparagus. I was pleasantly surprised by this meal, as I always remembered this place being more of a traditional meat and fish type of restaurant. (They had some really good looking dinners for carnivores, I just didn’t order them)
Snacks & Sweet Treats
Tropical pre workout smoothie – 1 scoop amazing grass lemon lime energy powder, 1 cup non-dairy milk, 1 frozen banana, 8-10 frozen mango chunks
Split banana & nut butters! Left – creamy roasted almond butter, right – sunflower, both from TJ’s of course.
a few slivers of this high-protein, vegan, gluten-free cheesecake! I used Katie’s Cheesecake Mousse for the filling and a crust from Allyson at Manifest Vegan. I cut the sugar in the crust, and sweetened the filling with a bit of agave and powdered sugar. This is by far the best thing I ate all day.
banana-coffee-chip muffins, a recipe modified from my Vegan Brunch cookbook. Needs a little more tweaking, a bit too chewy – but the flavor is there. And the caffeine, oh boy.

The best thing I’ve eaten today was a tiny tiny square of chocolate… but it’s only 6:30am, so I’m sure yummier things (and much more chocolate!) will be consumed as the day goes on

Oooo you weren’t kidding about that cheesecake being the best thing you ate all day! It looks delicious! Unfortunately, there’s been no cheesecake in my days
BUT I did enjoy a delicious bowl of dessert oats for breakfast, with almond butter and pudding
Those muffins look incredible! I just made banana chocolate chip muffins- coffee flavor would be excellent!
