Happy 4th of July, my fellow Americans! I must say, I had a rather un-patriotic holiday.  No fireworks were involved, and there was very little of anything red white and blue. But there was copious amounts of food, family and good times had.

Yesterday, my mom and I went for a scenic (not really for fitness) 20 mile bike ride through Indiana.  On one of the roads, we saw this amazing, big turtle – in the middle of the road! We weren’t sure if it was alive or not, but some other cyclist came by and tried to pick it up and move it, and it started snapping and snarling.  Scary. Eventually another guy stopped his car, got out, and very quickly and artfully moved the turtle across the road, where it was headed.

Of course, egg-y oats were eaten after the ride.

After the beach, there was lots of hanging out and cooking.

My dad and uncle fired up the grill – 2 beer can (beer butt!) chickens, asparagus and mushrooms.

So. much. food! Delicious chicken and veggies, as well as cabbage-slaw and couscous both made by my aunt, plus some spiced, roasted cauliflower made by my uncle (a different uncle).

I definitely went back for seconds on the veggies :-)

After dinner, everyone needed some time to digest before dessert.  Dinner ended just in time for the sunset over the lake.

Dessert was peanut butter bars, berries, and a crisp with vanilla bean ice cream.  Unfortunately, I didn’t quite get a chance to snap any good pictures.

This morning we did a bit of shopping.

Seriously, the best outlet mall ever.  They have some awesome sport and fitness stores, including a nike factory outlet,

champion, and under armor stores.  I only got one new champion sports bra, but it’s always fun to browse..

The rest of the 4th was spent resting – my left hip has bothered me for a few days, so I’ve tried to take easy a bit more.  It’s hard.  When I got home today, I did do BodyRock’s Amazing Abs interval workout.  I’m starting to love bodyrock more and more, it’s just so quick but so intense and effective.

For dinner, we got a last-minute invite to our neighbor’s barbecue.  After eating chicken for two meals in the past 24 hours, I wasn’t in the mood for meat.  I went home and put together this guy:

Lettuce, cucumbers, carrots, peppers, peas, and almonds. All chopped.  It ended up being a delicious summer crunch salad!  I also threw together a sesame-ginger balsamic dressing to go along with it, and of course ate way too much for the second night in a row – but hey, it’s a holiday, and I had a good time.

    I love that picture of you and your sister!! You two are gorgeous and look so happy. I wish I was at the beach!!! I’m so jealous of your trip to the outlets. You should see me at the nike outlet. I’m a vicious shopper.

    I’ve never tried BodyRock, but it sounds pretty hardcore from what I’ve read. I’ll definitely have to try it.

    I had a banana softserve fudge sundae! W blueberries and strawberries :-)
    LOVE THE SUNSET PIC! Looks like ur havin fun at the beach! WISH I WAS THERE!!
