My early monday morning (7am) pilates class has become essential for starting my week on the right track. I often find myself unmotivated to wake up early for no real reason (hey, it’s summer vacation!), and if I start my week with this attitude I find it very difficult to shake. If I over-indulge or get too lazy over the weekend, I need the monday morning kickstart. The class itself is a traditional pilates mat class, but you can adjust the difficulty level to suit your body. Even if the workout is not super difficult (it varies from week to week) I leave the class feeling ready to tackle whatever the coming week may decide to throw at me.
After my pilates class I did a crazy cardio workout: 10 m ins stair stepper, 10 mins running stride elliptical, 10 mins hill climb elliptical, 10 mins treadmill with speed intervals. It was actually really fun – I haven’t enjoyed gym machines that much in a while.
Breakfast was something new today – my first attempt at popped amaranth!
I did burn the first few tablespoons I tried, and for the rest (that I ended up eating) I barely managed to pop about 2/3 of the seeds. I think I’m beginning to understand the tricks now – I need a much bigger and heavier pan, and the seeds can only make one thin layer in the pan.
Also in the bowl:
- blueberries & banana
- unsweetened almond milk
- 1/2 scoop vanilla Sun Warrior – adds sweetness and flavor and much-needed protein!
I’m going to keep working at it until I get it as close to perfect as I can!

The Good Humor man, spotted on my street! It was playing the silly music and all If I still ate that kind of stuff, I definitely would have flagged him down. I guess I’ll make do with a photo instead.
I’m not usually one for snapping random pictures, but here we are. The tree caught the sunset!
