I thought it was summer!

So, Chicago doesn’t seem to like sticking with one season.  After two days of awful humidity and above 90 degree weather, it stormed all of last night and this morning, and only hit 60°.  After my 30 minute Tread It! class I stretched for 20+ minutes – I was really sore from not having enough time to stretch yesterday.  Then I did a bit of shoulder work, and walked home in the *summer cold*.

Although I wanted to try my amaranth for breakfast after my workout, the chill made me crave hot oats. Sigh.

Oat bran and chia seeds made with unsweetened soy milk (for the extra protein) and a few drops of vanilla stevia, topped with dried blueberries and a dollop of sunflower seed butter. Dough-y, warm and delicious.

After that I had the urge to cook something, but was feeling lazy :-P.  The solution? Homemade roasted almond-cashew butter.

I generally like my nut butters unsalted, but if you prefer otherwise, sprinkle some water on the raw nuts and lightly coat with kosher or sea salt.  Toast at 350° for about 15-20 minutes. Or if you use my messed up toaster oven, for about 10 minutes or just until golden brown – be careful not to let them burn.

Once the nuts have cooled a bit, put them in the food processor and process until smooth and creamy, stopping every few minutes to scrape down the sides.  This should take about 10-15 minutes – SO worth the wait.

you’ll have ‘nut dust’ for a little while, but don’t get discouraged! It will eventually look like this:

So good. I’m not sure why I don’t make my own nut butters more often – this may have to change.

I had some of this with a banana for a snack. And quite possibly for dessert.

Speaking of dessert… After work tonight I came home and at some leftover salads for dinner (unfortunately they don’t photograph very well), then had one of these for dessert:

they’re definitely the best store-bought PB cups out there.  And the dark chocolate ones are vegan! I had to label them so the rest of the family wouldn’t eat them all.

Today’s late-nite snack: frozen banana slices.

I think that’s all for tonight.  Tomorrow morning is my favorite pilates class!
